A man of many trades, to hear his story and see how that has transformed into a thriving business in Paso is awesome! My mother-in-law arrived from Seattle on Saturday and we decided to take the one hour tour the following day. This was just the third time I had been to Mighty Cap, most recently on Thursday to buy some Chanterelles for a birthday dinner risotto. The tour was just $10 to near the story of how they grow and cultivate mushrooms locally. Henry was our guide and we started outside as he discussed the backstory and how Mighty Cap began, fielded a few questions and then we got into the actually facility. The group was small, just five, making it a bit more intimate than a larger group. I learned quite a bit on and it was a "fungi" experience. We got to hear and see the group bags and the actually mushrooms, housed in, what were refrigeration units kept near room temperature with a high humidity to replicate nature. All in all an amazing tour. We had a chance to sample their mushroom umami sauce. This stuff is bomb! So good, I couldn't pass up the opportunity to buy one. We also had a sample of jerky. Both were outstanding, as was the service and information provided by both Henry and Tim. Thank you so much for a great tour and an outstanding product. The ONLY place where I will source my mushrooms from."
